Pork loin
Dry rub of your choice. ( I use salt, pepper, ground cumin)
Generously apply rub well in advance all over the pork loin
With a hot grill or BBQ, place the loin and grill for 2-3 minutes
Rotate a quarter turn and repeat
Test for internal temperature and adjust timing of next quarter turn accordingly. Note:Internal temparature does not increase linearly .It accelerates as it approaches 125 degrees
Measure again and then give final 1/4 turn.
Take off at 130 degrees and let sit for 5 minutes before carving.
